Seafood curry is a delightful blend of ocean flavors and aromatic spices, perfect for those who love the combination of seafood with creamy, flavorful curry sauce. This recipe brings together tender seafood with a rich, coconut milk-based curry sauce that is sure to impress.


  • 400g mixed seafood (such as shrimp, squid, and scallops), cleaned and deveined
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, sliced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (14 oz or 400ml) coconut milk
  • 1 tablespoon tomato paste
  • 1 tablespoon fish sauce (optional, for added umami)
  • 1 tablespoon vegetable oil
  • Fresh cilantro leaves, chopped (for garnish)
  • Salt and pepper to taste
  • Cooked rice or naan bread, to serve


  1. Prepare the Seafood:
    • If using whole shrimp, peel and devein them. Cut larger seafood pieces into bite-sized pieces if desired.
  2. Cook the Curry Base:
    • Heat vegetable oil in a large skillet or pot over medium heat.
    • Add chopped onion and cook until softened, about 3-4 minutes.
    • Add minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
  3. Add Spices and Vegetables:
    • Stir in curry powder, ground turmeric, ground cumin, and ground coriander. Cook for 1 minute to toast the spices.
    • Add sliced red bell pepper and cook for another 2-3 minutes until slightly softened.
  4. Simmer with Coconut Milk:
    • Pour in the coconut milk and tomato paste. Stir well to combine.
    • Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has slightly thickened.
  5. Add Seafood and Finish Cooking:
    • Gently add the mixed seafood into the simmering curry sauce.
    • If using fish sauce, add it at this point for extra depth of flavor.
    • Cook the seafood in the curry sauce for 5-7 minutes, or until seafood is cooked through and opaque. Be careful not to overcook.
  6. Serve:
    • Season with salt and pepper to taste.
    • Garnish with chopped fresh cilantro leaves.
    • Serve hot with cooked rice or naan bread on the side.
